In honor of several Reddit requests and our Nuts About Coconut Flour article yesterday, I’d say it’s high time for a coconut flour bread recipe, wouldn’t you!?

I scoured a handful of grain-free baking sites and found a bread recipe that looks super-simple at Amazing Paleo so I decided to start there. As usual, I made a few adjustments to make it my own.

 Here’s the recipe:

Preheat oven to 350º

Spray pan with coconut oil spray

 6 medium eggs whisked

1/2 cup melted coconut oil

1/4 cup full fat coconut milk {canned}

2 Tbsp apple butter

1 packet stevia

1 cup coconut flour

1/2 tsp salt

1 tsp baking soda

Bake at 350º for 25 minutes then decrease the temperature to 300º for the last 30 minutes

Let it cool for about 10 minutes before slicing

Serve it warm with butter or jam



Mmmm now I’m dreaming of toasted garlic bread with kelp noodles and turkey sausage for dinner tonight…
