CINNAMON RAISIN COCONUT FLOUR BREAD

While my coconut flour bread was baking the other day I already started thinking about other variations to concoct. Naturally, the first thing that came to mind was cinnamon raisin. Ever since I was a little girl I’ve been a lover of crunchy, sweet raisin toast topped with butter and extra cinnamon. Despite being grain-free, I’m certainly not flavor-free so I’m bringing back a classic with a high-fiber, low-carb twist!

Here’s the recipe:

Preheat oven to 350º

Spray pan with coconut oil spray

 6 medium eggs whisked

1/2 cup melted coconut oil

1/4 cup full fat coconut milk {canned}

2 Tbsp apple butter

1 packet stevia

1 cup coconut flour

1/2 tsp salt

1 tsp baking soda

2 tsp cinnamon

1/2 cup raisins

Bake at 350º for 25 minutes then decrease the temperature to 300º for the last 30 minutes

Let it cool for about 10 minutes before slicing

It’s so good served warm with coconut butter {shown}!
