Who doesn’t love a good comfort food? Growing up, meatloaf was one of my favorite meals; however, only my mom’s! Meatloaf is one of those items that I would never order at a restaurant because in my head it will never be as good as home. Since leaving my parents’ house I’ve modified meatloaf quite a bit and I’m happy to report I’m very content with this recipe. If you’ve never made meatloaf, I say give it a whirl… you don’t know what you’re missing!  Buen Provecho!

Here’s the recipe


1 lb ground beef
1 lb spicy Italian sausage, removed from casing
2 T grill seasoning
½ onion, diced
½ green pepper, diced
1 Egg
1 T olive oil
1 yellow onion, halved and sliced thin
2 T Worcestershire Sauce
2 Stevia Packets
1 T water


Preheat oven to 350

Place ground beef and sausage in a bowl.  Add diced onion, green pepper, egg and grill seasoning.

Mix thoroughly to incorporate both meats and evenly distribute veggies and spice.

Put mixture evenly in a meat loaf pan.

Bake for 40-45 minutes

In the last 15 minutes of baking time prepare the glazed onions.

In a skillet heat up 1T of olive oil.

Add the sliced onion and cook for 5-10 minutes until they are softened.

Remove onions from the pan and add Worcestershire sauce, stevia and water.

Mix well and let sauce simmer until it begins to thicken.

Add onions back in and let it cook on low until the meatloaf is finished.

Remove meatloaf from pan and top with onions
